On a random day of scrolling through the internet looking
for a quick meal to whip up for dinner, I stumbled across a recipe from PETA for
“Easy Vegan Pad Thai” and thought to give it a try. It actually turned out
pretty good and I ended up making it a second time for my mom, so I decided to
share it with you.
What you’ll need:
Soy Sauce
Rice Noodles
Peanut Butter
Lime
Olive Oil
Sriracha Sauce
Green Onion
Tofu
Garlic
A word of warning the Sriracha sauce can get very spice
after a few splashes so please don’t what I did and get Sriracha happy and
decided to add a few extra splashes after you added the rice noodles to the
sauce…. It makes people not want to eat your cooking again…. Sorry mom.
Recipe:
1 Pack of Rice Noodles
2 Tbsp. Olive Oil
½ of a 12 oz. pack of Firm Tofu –drained and chopped-
4. Tbsp. Soy Sauce
2 Tbsp. Peanut Butter
Juice of 2 limes, or 2 squirts of Lime Juice
3 Tbsp. Sugar
Sriracha Sauce –to taste-
Sliced Green Onion- For garnish,-
Instructions:

Boil a pot of water for your noodles, Let the
noodles sit for about 15 minutes…. Or however the package tells you to do it

In a Frying pan, heat your olive oil on medium
heat and add the garlic and tofu chunks. Drizzle 1 Tbsp. of soy sauce on the
tofu and garlic and cook until golden brown
· In a bowl mix together the peanut butter, lime
juice, sugar as much Sriracha sauce as
you would like, the remaining 3 Tbsp. of soy sauce and 1 cup of water

Add your cooked noodles and the peanut butter
sauce to the frying pan with the tofu and garlic and let that cook thoroughly for
about 5 minutes

Mix in the green onion, serve immediately
In the end, this is a favorite vegan dish I whip up on a
lazy day when I don’t feel like doing too much. If you do make the Pad Thai
